Shenyang Huítóu: The Crispy Pancake of Northeast China

Huítóu, meaning "to turn back," is a traditional halal snack from Shenyang, Liaoning Province. Its origin is traced to the Guangxu period of the Qing Dynasty, when a family named Jin ran a struggling baked pancake shop near the North Gate of Shenyang .

One Mid-Autumn Festival, business was so slow that the shop owner bought some beef with his last coins and made a simple folded pancake for his family. A government messenger happened to see the novel snack cooking in the pan and tried it. Finding it delicious, he ordered more to be sent to the official courier station. The snack became an instant hit, and people kept "turning back" to buy more—hence the name "Huítóu" .

Today, it is recognized as one of Shenyang's "Eight Great Snacks" and a staple of the city's halal culinary tradition .

Preparation Steps

Huítóu is similar to a pan-fried pancake but with a distinct rectangular shape.

Preparing the Dough: Wheat flour, water, and a pinch of salt are mixed into a soft dough and left to rest .
Preparing the Filling: The classic filling consists of minced beef (or lamb) mixed with finely chopped onion (or other seasonal vegetables), along with ginger, soy sauce, sesame oil, and spices .
Shaping: The dough is divided into small portions and rolled into thin, rectangular wrappers. A portion of filling is placed in the center, and the wrapper is folded over to form a neat rectangle, with the ends pressed firmly to seal .
Pan-Frying: The Huítóu are pan-fried in oil over medium heat until both sides turn a rich golden brown and the crust becomes crispy and puffed .
