Korean-Chinese Ginseng Chicken Soup: A Nutritious Delicacy

Ginseng Chicken Soup is a beloved medicinal dish rooted in Korean culinary tradition, particularly popular in Northeast China's Yanbian Korean Autonomous Prefecture. The dish combines Korean cooking techniques with the Chinese belief in the healing power of ginseng. Historically, it was prepared during hot summer days as a way to "fight heat with heat"—eating warming foods to restore energy lost through sweating, based on the traditional belief in balancing the body's energy. The dish also holds deep cultural significance in Yanbian, where ginseng has been cultivated and prized for centuries as a symbol of vitality and longevity.

Preparation Steps

Preparing the Chicken: A whole young chicken, usually about 500-700 grams, is cleaned thoroughly. The cavity is stuffed with glutinous rice, garlic cloves, and jujubes (dried red dates).
Adding Ginseng: A fresh or dried ginseng root is placed inside the chicken along with the other fillings.
Simmering: The stuffed chicken is placed in a large pot and covered with water. The soup is brought to a boil, then simmered over low heat for at least 1.5 to 2 hours until the chicken is incredibly tender and the rice is fully cooked.
Seasoning: The soup is lightly seasoned with salt, sometimes with a splash of cooking wine to enhance the flavor.
Serving: The soup is served hot, with the whole chicken presented in the bowl. It is often accompanied by a small dish of salt and pepper for dipping the chicken meat.

Review and Appreciation

Ginseng Chicken Soup is cherished for its delicate, savory flavor and numerous health benefits. The chicken becomes so tender that it falls off the bone, while the glutinous rice absorbs the rich, herbal broth. The ginseng adds a subtle earthy note and is believed to boost energy, strengthen the immune system, and improve overall well-being. The soup is light yet nourishing, making it perfect for any season.
