Zhejiang Beggar＇s Chicken: A Rustic Delicacy Wrapped in Tradition

Beggar's Chicken, known as "jiaohua ji" in Chinese, is a famous dish from Zhejiang Province, particularly associated with Hangzhou. It has a history of over 300 years, dating back to the Qing Dynasty. According to legend, a beggar in the Jiangnan region stole a chicken and, without access to proper cooking tools, wrapped it in lotus leaves and clay, then roasted it over a fire. When he cracked open the clay, the chicken was tender, fragrant, and full of flavor. The dish became popular and was later refined by chefs, who added seasonings and wrapped the chicken in lotus leaves before encasing it in clay. Today, it is a beloved specialty of Hangzhou and a symbol of rustic, creative cooking.

Preparation Steps

1. Preparing the Chicken: A whole young chicken is cleaned and marinated with soy sauce, cooking wine, ginger, scallions, and spices for at least an hour.

2. Wrapping: The marinated chicken is wrapped in lotus leaves, which add a subtle, fragrant aroma. It is then tied with string to hold its shape.

3. Coating: The wrapped chicken is covered with a thick layer of clay or a dough made from flour and water to seal in the heat and moisture.

4. Roasting: The clay-covered chicken is roasted in an oven or over hot coals for about 2 to 3 hours, allowing the heat to penetrate and cook the chicken slowly.

5. Serving: The clay is cracked open, and the lotus leaves are removed, revealing the tender, fragrant chicken. It is served hot.

Review and Appreciation

Beggar's Chicken is loved for its incredibly tender, juicy meat and its rich, aromatic flavor. The lotus leaves and clay seal in the moisture and infuse the chicken with a subtle, earthy fragrance. The dish is both theatrical and delicious.
