Fujian Fotiaoqiang: The Legendary Buddha Jumping Over the Wall

Fotiaoqiang, which translates to "Buddha Jumping Over the Wall," is one of China's most famous and luxurious dishes, originating from Fuzhou, Fujian Province. It belongs to Fujian cuisine (Min cuisine), which is one of China's eight great culinary traditions. The dish has a history of over 100 years, dating back to the Qing Dynasty. According to legend, it was created by a chef who gathered a variety of premium ingredients, including sea cucumber, abalone, shark fin, and chicken, and simmered them in a clay pot with Shaoxing wine. The aroma was so enticing that even a vegetarian monk, who had been meditating peacefully, was tempted to jump over the wall to taste it—hence the name. Over time, Fotiaoqiang became the ultimate symbol of luxury and refined dining.
