Wuhan Three-Delight Bean Skin: A Savory Breakfast Classic

Wuhan Three-Delight Bean Skin, known as "sanxian doupi" in Chinese, is a popular breakfast dish from Wuhan, Hubei Province. It is a staple of Wuhan's street food culture and has been enjoyed for decades. The dish is made by pan-frying a thin layer of bean skin filled with a savory mixture of rice, eggs, mushrooms, and meat. It is believed to have been created in the 1930s by a chef who wanted to combine the flavors of traditional Chinese ingredients into a portable, satisfying meal. Today, it is one of Wuhan's most iconic breakfast items.

Preparation Steps

1. Preparing the Filling: A mixture of glutinous rice, diced pork, dried mushrooms, and bamboo shoots is stir-fried with soy sauce, cooking wine, and spices.

2. Making the Bean Skin: A thin batter made from mung bean flour and eggs is poured onto a hot, oiled griddle and spread into a thin layer.

3. Adding the Filling: The rice mixture is spread evenly over the bean skin.

4. Folding: The bean skin is folded over the filling, creating a rectangular shape.

5. Pan-Frying: The filled bean skin is pan-fried until both sides are golden and crispy.

6. Serving: The dish is served hot, cut into bite-sized pieces.
