Huaxi Beef Noodles: A Simple Bowl of Guizhou Comfort

Huaxi Beef Noodles come from Huaxi District in Guiyang, the capital of Guizhou Province. It's a humble dish that has been warming locals for decades. The area is known for its fresh beef, and locals figured out early on that slow-cooked beef with chewy rice noodles made for a perfect meal. It started as a simple breakfast for workers and students, but over time, it became one of Guizhou's most famous noodle dishes. Today, you'll find it everywhere in Guiyang, from street stalls to proper restaurants.

Preparation Steps

1. Preparing the beef: Beef brisket or shank is cut into chunks and simmered for hours with ginger, star anise, cinnamon, and soy sauce until it becomes tender and deeply flavored.

2. Preparing the noodles: Fresh rice noodles are boiled quickly until soft and chewy, then drained.

3. Making the broth: The beef cooking liquid is used as the broth. It's rich, savory, and full of spice aroma.

4. Putting it together: The noodles are placed in a bowl, topped with chunks of beef, and covered with hot broth. Fresh scallions, cilantro, and a spoonful of chili oil are added.

Review and Appreciation

Huaxi Beef Noodles is the kind of dish that doesn't try too hard. The beef is melt-in-your-mouth tender, the broth is deep and beefy, and the rice noodles are smooth and chewy. The chili oil adds a nice kick, but it's not overpowering. It's a straightforward, honest bowl of noodles that fills you up and leaves you feeling satisfied. For many locals, it's the taste of home.
