Yunnan Crossing-the-Bridge Noodles: A Hot Pot of Noodle Soup

Crossing-the-Bridge Noodles, or "guoqiao mixian," is one of Yunnan's most famous dishes. It comes from a romantic story about a scholar's wife. She would carry a pot of hot broth and raw ingredients across a bridge to her husband, who was studying on an island. The broth was so hot that the ingredients cooked instantly. The name stuck, and the dish became a symbol of love and care. It's been a Yunnan classic for over a hundred years.

How It's Made

1. The broth: A rich, clear broth is made by simmering chicken, pork bones, and ham for hours. It's served boiling hot, with a layer of oil on top to keep the heat in.

2. The ingredients: A platter of raw ingredients is served separately. It usually includes thin slices of chicken, pork, fish, shrimp, tofu skin, and fresh vegetables.

3. The noodles: Thick rice noodles are boiled separately and kept warm.

4. Putting it together: The raw ingredients are added to the boiling broth first, followed by the noodles. Everything is mixed in the bowl and eaten hot.

What It's Like

Crossing-the-Bridge Noodles is more than just a meal, it's a ritual. The broth is so hot it cooks the raw ingredients in seconds, keeping them tender and fresh. The layers of flavor are clean and natural. The chicken and ham give the broth depth, while the vegetables add crunch. It's a light, satisfying meal that feels like a warm hug. Locals often call it "the king of noodles."
