Yunnan Steam Pot Chicken: Pure and Simple Goodness

Yunnan Steam Pot Chicken comes from the city of Jianshui in Yunnan Province. It's a dish that has been around for over two hundred years, dating back to the Qing Dynasty. It was created by a clever cook who figured out a way to make chicken broth without adding water. The secret lies in the clay pot, the pot is shaped like a cylinder with a hollow chimney in the middle. When the pot is placed over boiling water, steam rises through the chimney, and the trapped steam turns into liquid, slowly creating a clear, golden broth. It's a dish that represents the ingenuity of Yunnan's traditional cooking.

How It's Made

1. Preparing the chicken: A whole chicken is cut into pieces and placed in the steam pot.

2. Adding ingredients: Ginger slices, scallions, and a little cooking wine are added. Sometimes goji berries and mushrooms are included for extra flavor.

3. Steaming: The pot is sealed and placed over another pot of boiling water. The steam rises through the chimney and circulates inside the pot. The chicken cooks slowly for two to three hours.

4. Serving: The pot is brought directly to the table. The broth is clear and fragrant, and the chicken is tender and juicy.

What It's Like

Yunnan Steam Pot Chicken is a dish that doesn't need to show off. The broth is pure chicken flavor, clean and rich at the same time. There's no added water, just the liquid that comes from the steam, so every drop is concentrated with taste. The chicken is soft and falls apart easily, but it's not dry because it's been cooking in its own juices. It's the kind of dish that feels like home, even if you're eating it for the first time.
