Preparation Steps
Selecting the Chicken: A young, tender chicken, usually about 1.5 kilograms, is chosen.
Boiling: The whole chicken is placed in a large pot of boiling water with ginger and scallions. It is boiled for about 15–20 minutes, then the heat is turned off, and the chicken is left to cook in the hot water for another 15–20 minutes.
Chilling: The cooked chicken is immediately transferred to ice water. This step makes the skin firm and shiny.
Cutting: The chicken is chopped into bite-sized pieces and arranged on a plate.
Serving: It is served with a simple dipping sauce made of ginger, garlic, scallions, soy sauce, and sesame oil. In Shanghai, the sauce is sometimes slightly sweeter.
