They have a history of over a thousand years, dating back to the Northern Song Dynasty (960–1127). The name "guantang" means "filled with soup." These dumplings were created by chefs who wanted to combine the flavor of soup with the convenience of a dumpling. Today, soup dumplings are enjoyed across China and are especially popular in cities like Shanghai and Nanjing, but their roots remain in Kaifeng's rich culinary heritage.
Preparation Steps
Preparing the Filling: Pork is minced and mixed with seasonings. Gelatinized pork broth is added to the filling and chilled until firm.
Preparing the Wrapper: Wheat flour and water are mixed into a smooth dough and rolled into thin, round wrappers.
Wrapping: A spoonful of filling is placed in the center of each wrapper. The edges are pleated and sealed at the top.
Steaming: The dumplings are placed in a bamboo steamer and steamed for about 8–10 minutes until cooked.
Serving: The dumplings are served hot with a dipping sauce of vinegar and shredded ginger.
